In the back of my birthplace, the current Wenhanjuku main store, there used to be a Wenhan factory that was destroyed in a fire. When I was young, factories were everything to me, but about 1 km towards Kanuma is the Kokura Factory, where most of the manufacturing is done.
For me, who joined the company in 2000, it was my first time seeing the inside of the Kokura factory. I was interested in everything and tried every single thing.

I was intrigued when I saw that an unfamiliar white powder was mixed into the soy sauce.

When I was struck by the strong umami flavor and unbearable aftertaste, I realized that food additives are literally something that is added, not something that can be eaten.
This shocking experience led to my commitment to additive-free products.

As time passed and technological innovations progressed, we realized that we were ready to create the ideal soy sauce, so we reconsidered our manufacturing method, which relies on seasonings (amino acids), and this is what we do today.

Nikko soy sauce's Robatazuke is not sweet, has a nice aftertaste, and is a pickle that is filled with the passion for making soy sauce.
