Miso making is carried out during this cold period of Nikko in early spring.
It used to be a common sight in farmers' homes.
We all look forward to this season and work hard to make miso soup.
From this, we named the miso ``Harumachi Miso,'' a miso that waits for spring.

Locally collected rice is made into miso and returned.
Takikomi miso preparation is still in progress.
I strained the miso to make it smoother.

"Rice miso" is a 2:1 mix of rice and soybeans.
"Mixed miso" is a 1:1:1 mixture of rice, wheat, and soybeans.
In other words, it is a luxurious miso made with twice as much rice and barley as beans.
